The History of Sushi

The History of Sushi
Sushi is one of Japan's most popular dishes, and its origins can be traced back to very ancient times.
The roots of sushi can be traced back to ripe sushi, which developed in Southeast Asia around the 4th century BC.
This method involved fermenting fish with salt and rice to preserve it.
This method was introduced to Japan and became popular in the form known as nare-zushi during the Nara period (710-794).
At that time, only the fish was eaten and the rice was discarded.
Later, in the Muromachi period (1336-1573), Hayasushi, in which the fermentation period was shortened, appeared, and the rice was eaten together with the fish.
However, it was during the Edo period (1603-1867) that nigiri-zushi as we know it today was born.
It is said that nigirizushi was first served in Tokyo (then Edo) in the late Edo period by a chef named Hanaya Yohei, who used fresh fish.
This style of sushi gained popularity as a quick and easy meal suitable for busy urban life.
Today, sushi is widely loved not only in Japan but also abroad.
In particular, sushi using fresh ingredients such as tuna, salmon, and shrimp is popular among many people.
In addition, creative sushi such as California rolls and dragon rolls were created as the sushi culture became more internationalized.
Sushi has kept its tradition and uniqueness while changing its form with time and region.
Therefore, eating sushi can be considered a valuable experience to savor Japanese culture.
